Tasting Notes
Fresh and generous with brandied melon and butterscotch on the nose, with hints of vanilla overtones due to oak maturation.

Wine Analysis

  • pH: 3.29
  • Preservative 220 added.

Vintage Information

The fruit was berry sampled and hand-picked at 13 baumé. Held at 2°C for 2 weeks in a cool room, slightly drying the fruit and concentrating the flavours.

The grapes were destemmed and crushed, drained and lightly pressed. The free run juice was cold settled overnight, racked and fermented at 12-15°C. Malolactic fermentation was implemented.

At completion the wine was cold stabilized at -4°C for 4 days, racked, sterile filtered,  PMS added,  0.6g/L of French oaked added, corked and cellared.

Try with a homemade seafood pizza with all your favourite toppings chosen by you! For example, mussels, turbot, prawns to name a few.

Cellaring Information

Has spent the last 10 years in the cellar at a constant temperature of 12-15°c and out of the light.  Drink now or cellars well for up to 20 years.
